To promote the exploration of career choices and foster creative expression, LI FACS Professionals supports our students in their quest for the acquisition of pastry and culinary arts skills. Family and Consumer Sciences’ classes provide students with an overview and introduction to a variety of career paths; one of the most exciting and popular is pastry and culinary arts. Students will learn how science, art, physics, customer service and marketing can be combined into a lucrative and rewarding career.
 
The Field of Pastry Arts:
With the growing popularity of the Food Network and shows like Ace of Cakes, Cake Boss & the weekly Food Network Challenges, the field of pastry arts, and cake design & decoration has become a booming industry. Students can see how by strategically applying the science of baking, the creativity of fine art & design, the laws of physics, and the strategies and principles of marketing, they can have the opportunity to create a unique niche for themselves as both artist and entrepreneur. Successful cake artists like Duff Goldman, Buddy Valastro, Colette Peters and Sylvia Weinstock, charge thousands of dollars for their designs while finding a creative outlet for the expression of their talent and passion. Is the next Ace of Cakes in your midst?

Requirements:
The Challenge: To create a unique, artistic, well constructed cake with a focused theme.
All entries must follow these common guidelines:
1.      Cakes must represent a focused theme.
2.      Cakes must be the equivalent of two-8” (square or round) or larger cakes.
3.      All cakes must be baked and decorated using butter cream-style or fondant icing. Decorations are left to the designer’s discretion.
4.      All non-structural components must be edible.
5.      Entrants must create a minimum 5-picture presentation of the process with narratives explaining the steps involved in its creation. The steps are as follows:
1.      Baked, unassembled cake (Foundation)
2.      Torted / layered or cut-up  and assembled with filling (Structure)
3.      Initial thin layer of frosting (Crumb Coating)
4.      Final thick layer of frosting (Frosting)
5.      Finished cake (Decorated & Complete)
6.      Presentation may be created and submitted in one of the following formats:
a.       Poster / Booklet
b.      PowerPoint, Movie Maker or similar slide-show program
c.       Video
____Middle School Level Entrants:
§  May use a cake mix & identify the brand and type
§  May use prepared frosting & identify the brand and type
§  May use prepared fondant & identify brand
§  Honorable Mention can be allowed when competition is extraordinarily high.
____High School Level Entrants:
§  Must bake their cakes from scratch & include a copy of the recipe
§  Must use homemade butter cream-style icing & include a copy of the recipe
§  May use prepared fondant & identify brand
§  Honorable Mention can be allowed when competition is extraordinarily high.
